Considerations for Filling Guacamole

Handling Delicate Product Inclusions

Guacamole may be produced as either a smooth product or a chunky formulation containing avocado pieces together with ingredients such as tomato, onion and chilli. Although both products are typically filled using volumetric piston fillers, chunky formulations require greater consideration when selecting the dosing system.

Product passages, filling valves and other wetted components should be matched to the size and concentration of the inclusions to minimise mechanical damage while maintaining reliable product flow. The final configuration should therefore be selected according to the recipe rather than the filling volume alone.

Product Feeding and Filling

Guacamole is a highly viscous product that does not readily flow or level after filling. Depending on the product consistency and cup geometry, descending filling nozzles or cup lifting can be incorporated to improve product distribution and produce a more uniform product surface.

Where required, the balance hopper can be equipped with a low-speed feeding agitator designed to gently convey the product towards the hopper outlet and piston filler. Rather than simply mixing the product, its primary function is to provide a continuous product feed to the measuring cylinder while reducing the risk of air pockets forming in highly viscous formulations. The agitator design, speed and blade geometry should be selected according to the product formulation and its flow characteristics.

Oxidation Control and Shelf Life

Fresh guacamole is generally more sensitive to oxygen exposure than many chilled dip products. Depending on the formulation, oxidation may affect the product’s colour, flavour and achievable shelf life. Although ingredients such as lemon or lime juice are commonly incorporated into many recipes to help slow oxidation, packaging conditions may also influence the final product performance.

For this reason, the product formulation and shelf-life objectives should be reviewed before specifying the filling line. Where reduced oxygen levels within the package are required, the machine can be configured with modified atmosphere packaging (MAP) as part of the overall packaging process.

Dosing System Selection

Volumetric piston fillers are the preferred dosing technology for most guacamole applications. Smooth formulations can generally be filled using a conventional piston filling system, while chunky products require product passages and filling valves sized according to the largest inclusions. Where highly viscous formulations are processed, the balance hopper can be equipped with a low-speed feeding agitator to provide a continuous product feed to the piston filler and reduce the risk of air pockets. The dosing system should always be configured according to the product formulation.

Ultra-Clean Design

Where improved hygienic control or extended chilled shelf life is required, the filling machine can be supplied in an Ultra-Clean configuration. Typical features include UV-C treatment of cups and lids, a laminar flow box with HEPA filtration and aseptic diaphragm valves within the piston filling system. Modified atmosphere packaging (MAP) and enhanced CIP arrangements can also be incorporated where required by the application.
